1 3/4 cups graham cracker crumbs

3/4 cup (1 1/2 sticks) unsalted butter, melted

3 tablespoons sugar


1 1/2 pounds cream cheese, room temperature

1 cup sugar

3 tablespoons cornstarch

1 teaspoon vanilla extract

4 large eggs, room temperature


2 cups sour cream

1/4 cup sugar

1 teaspoon vanilla extract


1. Preheat the oven to 350 degrees F. Butter the sides of a 9-inch springform pan and line the bottom with parchment paper. In a medium bowl, combine graham cracker crumbs, butter, and sugar; press onto the bottom and up the sides of the pan. Freeze for 10 minutes.

2. FILLING: Beat cream cheese, sugar, cornstarch, and vanilla extract at medium speed until creamy. Add eggs, one at a time, beating just until blended after each addition. Pour filling over the crust.

3. Place the pan in a large roasting pan; fill with hot water to 1 inch below the top of the springform pan. Bake for 1 hour and 10 minutes or until the center is almost set.

4. Remove cheesecake from the water bath; cool on a wire rack for 30 minutes. Run a sharp knife around the edge of the cake to loosen; cool 1 hour longer.

5. TOPPING: Combine sour cream, sugar, and vanilla extract in a medium bowl; spread over cheesecake. Freeze for 2 hours or until topping is firm. Cover and chill overnight.

6. Loosen sides of the cake before serving; remove from pan.
