3 tablespoons cornstarch

1/2 teaspoon freshly squeezed lemon juice

GRAHAM CRACKER CRUST:

6 tablespoons (85 grams) unsalted butter, melted and cooled slightly

1 cup (120 grams) graham cracker crumbs

1/4 cup (50 grams) granulated sugar

1 teaspoon ground cinnamon

Pinch of salt

Instructions:

1. Preheat the oven to 375 degrees F (190 degrees C).

2. On a lightly floured surface, roll out the pie crust to a thickness of 1/8 inch (3 mm). Transfer to a 9-inch (23 cm) pie dish. Trim the edge of the crust, leaving a 1/2-inch (12 mm) overhang. Fold the edge under and crimp decoratively. Prick the bottom of the crust several times with a fork. Bake for 8 minutes, then set aside to cool.

3. In a medium bowl, combine the butter, sugar, flour, cinnamon, and nutmeg. Mix until well blended.

4. Spoon the mixture into the crust. Arrange the peach slices over the top.

5. In a small bowl, whisk together the sugar, cornstarch, and lemon juice. Pour over the peaches.
