Ceese Dessert Graham Crackers

Strawberry Cream Cheese Dessert Graham Crackers are almost the same as my Strawberry Cheesecake Dessert Graham Crackers, with a few changes. The recipe is based on my cheesecake dessert graham crackers except using strawberries instead of the cherry topping. These are fantastic for summertime because you can make them in any shape you’d like! I made mine into little heart shapes to really go with Valentine’s Day but if you wanted to make them for Christmas I would suggest making Christmas trees out of them or maybe even stockings if they were big enough! Another great thing about these Strawberry Cream Cheese Dessert Graham Crackers is that they’re not only super adorable but super simple too. You don’t have to bake anything so these will be ready for serving in about 15 minutes! I love the fresh strawberries inside and of course, on top too. The more fruit the better as far as I’m concerned.

All you need for Strawberry Cream Cheese Dessert Graham Crackers

– 1 roll pre-made sugar cookie dough (you can also make your own from scratch)

– 3/4 cup cream cheese frosting OR you can use some softened vanilla ice cream if you don’t have any frosting laying around

– 4 cups sliced strawberries – a little under half a pint or enough to cover a whole cookie sheet plus a few extras

– 1 tablespoon chopped graham cracker crumbs per dessert graham cracker, optional but highly recommended!

– rainbow sprinkles!!! totally optional but seriously makes it super cute and festive, I used these ones because they were on sale at target

Procedure to make Strawberry Cream Cheese Dessert Graham Crackers

1. Cut your sugar cookie dough in half lengthwise so you have two long strips of pre-cut dough. Then cut each strip into 5 rectangles that are about an inch wide. You should end up with 10-15 total rectangles of dough.

2. Make cream cheese frosting by either using store-bought or my recipe for cream cheese frosting. If you don’t want to go through the trouble of making it just use some softened vanilla ice cream instead, which is what I did when I made these! Also, if you don’t have cream cheese frosting or vanilla ice cream on hand just use a little bit of milk and some powdered sugar instead.

3. Spread your frosting on top of the rectangles evenly with a knife or pastry brush. Don’t go overboard with the frosting but make sure it’s enough to hold the strawberries in place later on. Then line your sliced strawberries up long-ways along one side of each rectangle.

4. Add your sprinkles onto your Strawberry Cream Cheese Dessert Graham Crackers now so they stick easily before rolling them up!

5. Roll each strip up into a log starting from where you lined your strawberries up and folding that flap over as you roll it towards the other end. Do the same for the other side too to cover up your strawberries completely.

6. Wrap each log with plastic wrap and stick them in the freezer for at least 20-30 minutes so they firm up a bit before cutting into shapes or slices! You can also leave them overnight if you want, just make sure to let them thaw out a bit before serving to room temperature.

7. Slice each Strawberry Cream Cheese Dessert Graham Cracker log into 1/2 cm thick pieces or about 1/4 inches wide. This really depends on how big you want your heart-shaped desserts graham crackers but if you’re unsure start smaller first then cut off more dough as needed until it fits around your strawberry cream cheese centre.

8. Refrigerate Strawberry Cream Cheese Dessert Graham Crackers for at least another hour before serving to let them set even more and firm up a bit. You can serve them now if you wish but they’ll be much easier to cut and hold together if you wait an hour or so first!
