The recipe for no bake blueberry cheesecake without gelatin


We’ll need some cream cheese, powdered sugar, lemon juice, and vanilla extract to start. Without the gelatin, we will use whipped cream instead of egg whites to create a lighter texture.

1. In a large saucepan, combine sugar and blueberries; cook over medium heat until berries pop and the mixture is slightly thickened. Remove from the heat and set aside to cool completely. 2. With an electric mixer, beat cream cheese, margarine, and lemon peel on medium speed until light and fluffy. Gradually add flour; mix well. Fold in cooled blueberry mixture. 3. In a small bowl, combine walnuts, cookie crumbs, and melted chips; stir into cream cheese mixture just until combined (do not overmix). Set aside 1-3/4 cups for topping if desired; cover remaining cheesecake filling with plastic wrap to prevent excess drying while preparing crusts or bowls for no-bake cheesecakes. 4. Place paper liners in 36 mini muffin cups or grease the bottoms and sides of 3-1/2 inch bowls or ramekins; coat with cooking spray. Prepare crusts as desired, using 9 gingersnaps crumbs per bowl for molded no-bake blueberry cheesecakes, 2 tablespoons crumbs per bowl for no-bake layered cheesecake, or 1/4 cup crumbs per bowl if no-bake cheesecake is served directly from a round baking dish. 5.
